A Beginners Guide to Sushi Many people think that the word sushi means “raw fish,” but this simply isn’t so. A sushi dish may contain either raw or cooked fish. The word “sushi” actually does not refer to fish at all, but rather to the vinegared rice used in the dish. In Japanese the word for vinegar is “su” while the word for rice is “meshi.” So to say “vinegared rice” the two words are combined together as “sushi.” When made correctly, the sweet vinegar used in the rice, should just contribute a very light flavor to the rice. It should not be bitter, tart, or “vinegary.” Sushi is as much an art form as it is a healthy and delicious food, and there are many ways of preparing it. It takes a lot of time, patience, and practice to perfect ones sushi making skills. For the average person who is just getting interested in sushi, a sushi menu can be quite intimidating. Maki-zushi, nigiri-zushi, and sashimi are just a few of the words you’ll likely discover on a sushi menu. One of the most familiar forms of sushi found in restaurants is the maki-zushi or sushi roll. Here we find fish or seafood and/or vegetables rolled into vinegared rice and wrapped with a tender seaweed sheet called nori. The roll is then cut into slices. When the nori is on the inside of the roll (an inside-out roll) it is referred to as uramaki. Some sushi restaurants also offer futomaki which is a much thicker roll than the standard maki-zushi. Perhaps the most well-known of the maki-zushi rolls is the California roll. The California roll is usually made as a uramaki (inside-out) roll and often contains cucumber, imitation crab meat, and avocado. It is then rolled in toasted sesame seeds, tobiko, or masago. Tobiko is simply flying fish roe (eggs) and has a mild smoky/salty taste and is orange in color. Masago is Capelin roe and has a similar taste and color. Nigiri-zushi or nigiri is made quite differently. It generally consists of an oblong or rectangular mound of rice, topped with a piece of seafood such as salmon, tuna, eel, or octopus. Nigiri is often made with raw fish. Many times the chef will add a small amount of wasabi between the rice and the seafood, and in some cases will wrap it together with a thin strip of nori. Wasabi is known as Japanese horseradish. It has an extremely strong flavor, and is usually light green in color. It only takes a tiny drop of wasabi to flavor sushi. Most sushi connoisseurs prefer not to use wasabi as its strong flavor can keep one from being able to taste the natural flavors of the sushi. Last but not least is sashimi. Sashimi is sliced raw fish. It is neither wrapped in a roll nor served on a bed of rice. It is sometimes served with shiso (a large green leaf) and daikon (shredded Japanese radish). It’s important to note that the sushi served in the Americas and Europe is very different than what is served in Japan and has been adapted over decades to appeal to the Western palate. The dishes found at Ninja are a little pricey, but it is worth every penny to be given one of their many magic-filled “Ninja Art Dishes”. The food is made from scratch by hand using only the freshest of ingredients, many which are brought from Japan. One example of the Ninja art dish is a salad presented on top of a grapefruit that has a sword through it. When you pull the sword out of the grapefruit it releases oozing smoke clouds. Another Ninja Art Dish would be the Bonsai plant, which is a desert presented in the shape of a – you guessed it, bonsai tree. Many of the dishes are presented in such an elaborate way that you almost don’t want to eat it. How did presentation of the food get to be so original? The owner holds contests for the most unique ideas and picks the ones he feels will add to the life of the restaurant. The drinks at Ninja are anything but ordinary. Many of the cocktails contain muddled fruit or puree for an ultimately refreshing experience. If you want to stick to the Ninja theme, Japanese beers, vodkas, and sakes are also available. Ninja is open 7 days a week Monday-Saturday 5:45pm – 11pm and on Sundays & Holidays from 5:45pm – 10pm. Panama Sushi Coup – By, James D Evans – Book Review Reviewed by: Gary Sorkin, Pacific Book Review Title: Panama Sushi Coup The three words used in the title, “Panama Sushi Coup,” turn into an engrossing true story; a narrative about friendship, betrayal, foreign business development and sushi, by James D. Evans as he described a part of his life most people couldn’t imagine in their wildest dreams. He purchased, along with some of his friends, a fix-it-upper combination brothel and strip club in Panama. From the comfort of a Southern California “out-to-lunch-bunch” of friends that meet every Wednesday at their favorite sushi bar in Long Beach, the group began traveling to South America as an escape from their frustration with the dating scene in L.A. On multiple and frequent trips to Costa Rica and Panama, they uncover the social acceptability of prostitution in South America as legal and in many ways stimulating. So Jim, our faithful narrator, takes the reader on a candid and quite descriptive adventure assimilating carnal knowledge amongst the local working girls. Caution: This part of the book is a bit shocking; written from a masculine point of view for a male audience or extremely liberated feminine reader, but definitely not for the church-going-Sunday-tea-sipping group. I would classify this as R- rated for this very short portion, although there is a valid reason for Jim’s candid writing. He explained within his book as being necessary to provide a true understanding of what goes on during those paid sexual encounters. What impressed me most is when Jim meets Vivian, a soon to be girlfriend, he doesn’t reveal a thing ungentlemanly about their relationship, hence the shock value of the prior lustful episodes were just for that sole purpose – to shock. The next third of the book dwells on what Donald Trump would call “The Foreign Apprentice”- having 3 guys, drinking buddies from America, not speaking any Spanish, somehow going into business together as partners buying a penthouse condo and renovating a strip club/brothel in Panama City. The pages “flew by” as this became such an interesting shift in the story with legitimate observations, decisions, frustrations and success stories of achieving a Herculean task of daunting proportions. As Donald Trump would say, “You’re fired!” to the shenanigans of Angus, a dysfunctional overweight alcoholic with the gift of gab, Jim would chalk it up to “friendship” and overlook far too many “red flags.” The best part of any true story is that it is often better than fiction, as James D. Evans recounts episodes and antidotes of unimaginable circumstances. He ardently tries to bring some suspense into the storyline with the possibility of being stopped at customs, arrested and put in a Panamanian jail, however due to the honest and unassuming candor of his narration, some of the suspense is lost. Let’s face it, it’s not a James Bond novel or a Tom Cruise film. Nevertheless the reader is drawn into his intimate thoughts and reasoning, living vicariously through Jim’s exploits one gains a firsthand knowledge only few ever experience. As all good books have a beginning, middle and an end. Jim ends with some of the lessons he learned. I felt his “pain” over the betrayal of his, what were believed by him to be, closest friends. He felt forgiveness as a hard emotion to muster; easily said but next to impossible to believe. An insult tossed his way from a verbal spout when Angus called him “mentally ill” Jim later took to heart; agreeing with the fact that he needed to be crazy to have done what he did against his better judgment. Shocking at times as a lightning bolt, James D. Evans learns a lesson he pontificates to all that read “Panama Sushi Coup;” which is that friendship, like sushi, has a freshness date that can expire causing nauseating consequences.…

Why I Love Raw Fish The first time I tried sushi I thought it was strange. I remember trying to focus on the rice and just forget about the fish, seaweed and other strange stuff. To tell you the truth, I only ate it because I wanted to impress a girl. This girl was worldly and sophisticated and loved sushi. We were young and I suppose it could have been an act on her part, but now I understand why people love raw fish. It is definitely an acquired taste for a non-Asian person, but once you acquire the taste, you can never go back to days of innocence when you just thought it was weird. The reason for this is that there is no substitute for raw fish. If somebody told you you could never get another hamburger, you would find ways to indulge that craving; you could eat steak sandwiches or patty melts. If someone told you you could never eat raw fish again, how would you find a substitute? There is no other food like it. Without further ado, here are the reasons I love sushi and sashimi: It is visually artful. No other food is quite so decorative. The presentation of raw fish is quite a show. They put it on beautiful little platters adorned with ginger, herbs, sliced vegetables. You feel like you’re in Japan even if you’re in Skokie. It is texturally rich. You get the crispiness of the dried seaweed and vegetables, the grainy rice, the mushy, chewy texture of the fish. It’s everything you could ever want to put in your mouth. It is full of flavor, and you can dress it up as you please. If you like it salty, use more soy sauce. If you want it hot, dip it in some wasabi. If you like it sweet, adorn it with a pickled radish and a little ginger. Sushi can be made to taste — right at the table. It fills you up without making you feel bloated. This is one of the things I like best. When you finish a meal of raw fish, you are totally satisfied for many hours. At the same time, it doesn’t give you that gassy, bloated feeling you get after a big steak dinner. It is worldly and sophisticated. If you are on a date with a worldly and sophisticated person like the girl I referenced in the beginning of this article, you can’t go wrong with sushi, especially if you know what to order. That is basically why I like sushi. Oh, and it may have something to do with sentimentality: I ended up marrying the girl who introduced me to it.…

Conveyor Belt Sushi Is a Great Group Outing Idea When it comes to dining out, sometimes you feel like you’ve exhausted all the options. I know me and my friends often felt like we had. We have tried all those themed restaurants that just cost a lot of money for a few people dressed up in costume and some otherwise mediocre food. And we have eaten at the same old take out places again and again. It was getting boring but then we discovered the concept of conveyor belt sushi. I had never heard of it before but one of my friends had and so we decided to give it a try. The idea is simple; you sit down at a table and sushi comes out on different colored plates on a conveyor belt, hence the name conveyor belt sushi. You choose what you want to eat as it passes and it’s constantly being made fresh as people take off piece and the chefs replace them. Your plate color indicates price, so you know how much you are spending and the waiter just adds it all up in the end. There’s all kinds of great sushi to be had and when dessert comes around, it is even better! You get all kinds of options and it’s kind of hard to avoid them all, so you might eat a little more sweets than you meant to! We decided to try out this conveyor belt sushi recently and loved the idea. It was one of those kinds of restaurants that promoted a social environment, so you didn’t feel awkward trying to talk to your friends while everyone else was being quiet or feeling like you were disturbing the couple on their first date in the corner. It’s like buffet, but where you never have to get up! The food just comes to you, so you can continue to talk to your friends and not have to excuse yourself to get out of your corner seat. You also might find that you, like us, are more apt to try new and different sushi rolls. You can grab a plate and easily share it with everyone else, or hog it all for yourself if you find it delicious. But the prices are always super reasonable and easy to keep track of. You have to be a little quick though to get what you want, but it’s definitely worth it when you get that perfect shrimp tempura roll in front of you!…

Y Is for Yo Sushi (and Other Stories) Well, this article isn’t exactly about Yo Sushi! It’s about the fact that if you pay attention to the big companies around you, it’s very likely that you’ll find ideas that you can apply to your own business. Remember, big companies can afford to do things – they can afford to hire the best marketing consultants; the best design agencies; the best social media experts; the best advertising companies. Now, I’m not for one second suggesting that you should spend the type of money that the big boys are spending. What I am suggesting is that you learn from them and adapt some of the ideas that their very expensive marketing consultants have come up with to your business. Let me give you some examples: Costa coffee and a lot of the other coffee chains have loyalty cards. You buy one coffee, get a stamp and when you have five stamps or so, you get a coffee free. This is really easy to adapt and apply to your own business. Can you run a loyalty card scheme too? Prezzo (the Italian restaurant chain) have done wonders with their Facebook page. They encourage people to get involved by taking photos in their restaurants and posting the photos online. They also send out vouchers to all of their fans and recently did a campaign where they said if they got 50% more Facebook fans, they would give additional discounts to everyone. Could you do something similar? DFS run a 4 year interest free system whereby you get the first year for free for any sofa in their store and then pay the rest back over three years. Very clever campaign as they have made buying what could be an expensive item affordable for everyone. How could you apply this to your business? Renault (who I recently bought a car from) sent me a letter last week inviting me to pay for my services on a monthly basis. From just A�26 a month, I could have every service done for me plus if the tyres or anything not covered by the warranty failed, these would be replaced too. Paying attention to what the big boys are doing is a great way to get new ideas in your business and with a little bit of creative thought, you can often apply the same idea without spending very much money at all. So next time you’re out and about on your high street, instead of ignoring big chains, try visiting them and paying attention to what they’re doing to market and promote their businesses. You never could get some fantastic ideas for your business that you hadn’t previously thought of.…
